To better understand the impacts of climate change on supply chains, several case studies were completed on different food products. These case studies mapped the value chain of the products, and identified impacts and adaption strategies at each stage.
The case study process involved interviews with management representatives from participating businesses, and included growers, directors, and procurement, sales and logistics managers. The researchers also ‘walked the chain’; visiting growers and processing plants. This process provided an understanding of operation and management practices, and the roles and activities conducted across the whole value chain.
The findings from value chain analysis, consumer research, carbon and water footprint assessment and adaptation planning are integrated as case studies, as data for these research activities have been collected in the context of each of the three value chains featured in this study.
